Observation (CORRECTED DURING INSPECTION): Automatic paper towel dispenser in raw meat cutting room did not have paper towel. Staff member replaced paper towel at time of inspection.
Corrective Action(s): Ensure all hand wash stations are fully equipped with soap, paper towel, hot and cold running water at all times.

Observation: Noted a few broken/cracked tiles throughout the premises.
Corrective Action(s): Repair/replace broken/cracked tiles as part of ongoing maintenance. All surfaces are to be smooth, durable and washable.

Comments

- Premises cuts raw meat and sells prepackaged foods. Operator advised that they no longer sell any ready to eat foods since the cucina separated. Have owner look into submitting new health application form for classification change as it is no longer a permitted food service establishment.
- Premises has separate cutting areas for meats (pork at small service counter, chicken in the refrigerated room and stored at far end of large service counter, beef and veal at the other end and middle of the large service counter. Large portion of the beef and veal are cut at the other warehouse).
- All coolers 4C or less, Freezers less than -18C
- Meat cutting room 6C
- General sanitation satisfactory. No obvious signs of pest activity noted.
- Reviewed manual warewashing procedures at time of inspection - no concerns. 3 compartment ware washing sink located in the refrigerated room - drain plugs available.
- 100ppm chlorine sanitizer available in spray bottles and in containers with cloths submerged at each work station.
- Reviewed clean in place procedures at time of inspection. Ensure all equipment that is used routinely throughout the day (ie. meat slicer, band saw, grinder...etc) and not located within the refrigerated room is taken a part and all parts are thoroughly washed and sanitized at least every 4 hours.
- Ceiling tiles in refrigerated room have been replaced.
