Observation (CORRECTED DURING INSPECTION): * Dirty wiping rags were found all over counters and not in sanitary condition. Operator placed rags in sanitizer (bleach solution) after being told to remove rags off counters
Corrective Action(s): * Ensure all wiping rags are kept in sanitizer between use and not left all over counters as this is unsanitary

Observation (CORRECTED DURING INSPECTION): * Sanitizer for sanitizing food contact surfaces was not available at beginning of inspection. Operator set up sanitizer once they were told to have it ready to use while operating.
Corrective Action(s): * Ensure sanitizer is available at all times and ready to use during operation for sanitizing food contact surfaces.

Observation: * Some cleaning needs to be done through out kitchen including ventilation hood and baseboards etc as build up was noted

Observation (CORRECTED DURING INSPECTION): * Employee was handling food and not wearing proper apron/protection during food handling
