Comments

- General sanitation of kitchen, service and storage area satisfactory. Level of sanitation in storage room has improved since the previous inspection.
- Handsinks were supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- Sliding door cooler (kitchen) 3C
- Small sliding door cooler (front service area) 4C
- Line cooler 4C
- Sliding door beverage cooler 4C
- Sliding door cooler #1 (storage room) 4C
- Sliding door cooler #2 (storage room) 3C
- Freezers were functioning and maintaining product in a frozen state.
- No hot holding occurring at time of the inspection as lunch service had ended.
- Food was stored in a manner to prevent contamination (wrapped/covered)
- Meat slicer appeared clean. Reviewed cleaning and sanitizing procedures. Slicer is cleaned and sanitized immediately after use. Components that can be disassembled are put in the dishwasher and the remainder is cleaned in place and sanitized with Quats solution.
- Ice machine ice basin appeared clean/maintained. Ice scoop was stored in a sanitary manner outside of the bin.
- High temperature dishwasher operational. Final rinse measured 72.4C.
- Quats sanitizer present from dispenser in dishwashing area and in spray bottle. Concentration measured 200ppm.
- No signs of pest activity noted. Pest control contract in place with monthly service.

*Chef did not have a copy of Foodsafe level 1 certificate on-site, but indicated it is expiring soon and would be re-taking the course in August. Expiration date to be verified on database. Keep a copy of Foodsafe certificates on-site to allow for confirmation that requirements are met. The Operator must have completed Foodsafe level 1 and in the Operator's absence, there must be 1 staff member present who has completed the course.
