Comments

- General sanitation is good.
- All handwashing stations (front, back) stocked with cold/hot running water, soap, and paper towels. Waste bins are to be placed close to all handwashing stations to properly discard used paper towels.
- All coolers (walk in, prep, upright, undercounter) < or = to 4C.
- All freezers (walk in, chest) < or = -18C.
- Food items are stored in plastic insert containers with lids and labeled.
- All hot holding units > or = 60C.
- Temperature log was kept up to date. No temperature issues were noted.
- Three compartment sink available for manual dishwashing. Quat sanitizer available at 200ppm concentration. Please follow the proper dishwashing procedure: 1) wash 2) rinse 3) sanitize 4) air dry. Ensure to keep the sanitizing compartment free of dirty utensils and plates. This compartment is designated for sanitizing purpose only.
- High temperature dishwasher achieved 73C at the plate's level during the final rinse cycle.
- Surface sanitizer available in designated buckets with presoaked wiping cloths at 100 ppm chlorine solution. Ensure to provide surface sanitizers at each station (ie. sandwich prep station, serving area) at all times to clean and sanitize food contact surfaces.
- Dry storage area is satisfactory. Dry food items stored off the floor at min 6 inches.
- No signs of pest activity at the time of the inspection. Pest control report (dated December 2017) indicates no pest activity.
- FOODSAFE certified staff on duty.
