Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher registering 0ppm chlorine during the final rinse cycle.
Corrective Action(s): Instructed staff for today's lunch rush that dishes and utensils will be allowed to be manually warewashed. Wash and rinse in the dishwasher then sanitizer in 100ppm bleach in the 2 compartment sink. General sanitizer formula is 1 oz of regular unscented bleach to 1 gallon of water.

Corrective Action(s): Service technician called and to be onsite in the next several hours. Service the low temperature dishwasher and ensure it is capable of sanitizing dishes/utensils with 50ppm chlorine during the final rinse cycle. Obtain accurate indicating test strips to verify this concentration on a daily basis. Correct immediately.
