Observation (CORRECTED DURING INSPECTION): Broccoli cheddar soup had internal temperature measured at 54.2'C at this time. Soup was placed at 10am this morning, less than 2 hours prior to the inspection. Temperature knob was adjusted >60'C at this time.
Corrective Action(s): Ensure to have the hot holding units operating >60'C before placing food in the unit.

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water throughout.
-Coolers operating at/below required temperature of 4'C; Freezer operating below -18'C.
-Hot-holding units all operating >60'C, except mentioned above.
-Thermometers available for temperature monitoring. Records kept up to date.
-High temperature dishwasher achieved 74.6'C at the plate level after final rinse.
-200ppm Quats available in buckets to hold wiping cloths.
NOTE: Quats sanitizer buckets for the front area were refilled with 200ppm Quats by staff at the beginning of the inspection, only the ones from the back area were checked to have 200ppm Quats. All refilled at this time. OK
-Drink stirrers stored in ice at this time.
-General food storage practice satisfactory throughout.
-Back storage area satisfactory. No evidence of pest activity observed at this time.
-Washroom handsinks satisfactory.

General maintenance and sanitation of the facility satisfactory.
