304 - Premises not free of pests [s. 26(a)]
Observation:
Mice droppings found on trollies, counter tops, floors along the base of walls, and on shelves in the premises. Holes in walls found.
Corrective Action(s):
1) Clean up the droppings. Wash and sanitize all surfaces that came into contact with the droppings. Wash with hot soapy water, then sanitize with a bleach and water solution.
2) Call a professional company to eliminate the mice problem and to block all holes or openings in walls and/or around pipes. A contract to eliminate and monitor for pests shall be put into place.
3) Follow all recommendations made by the professional pest technician.
4) A detailed cleaning of the whole premises shall be done to remove all food debris on walls, floors, surfaces and equipment.
5) Throw away all unused/broken equipment to eliminate places for mice to hide and live.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
There is food debris and grease found on walls; counter top; floors under prep tables, equipment, shelving racks, & sink; and on equipment.
Corrective Action(s):
A deep cleaning, from top to bottom, of the whole premises requires to be completed. All items must be remove from the floor, shelves and cupboards so all surfaces are scrubbed clean with hot soapy water, degreaser and a brush.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The 2-comp sink in the back kitchen is still leaking. There is a large bus bin collecting the water. The collected water is supplying rodents with a water source.

2) The main sandwich assembly cooler was 17C. No food was being stored in the cooler at time of the inspection, and a service company was coming to fix it.
Corrective Action(s):
1) Repair the 2-comp sink so it no longer leaks.

2) Do not use the sandwich assembly cooler to store perishable foods in, until it is repaired. Repair the sandwich assembly cooler so it can maintain food at 4C of colder at all times.
**Correction date: Immediately**

Observation:
There are various broken and/or unused equipment found in the the premises. This is creating an environment that rodents like to live in.

Remove and throw away all broken and/or used equipment.

Comments

A routine inspection was completed:
- Upright, double-door cooler was 4C; upright double-door freezer was -14C; drink cooler was 5C; hot holding units above 60C; and thermometers present.
- 2-compartment sink had dish soap and bleach present for proper ware washing.
- Front hand sink had running hot and cold water, liquid soap and paper towels.
- All foods stored in food grade containers; covered; foods stored in groups with proteins below or separate from RTE foods.
- No expired foods in use. FIFO rules being followed.
- General sanitation level requires improvement in mentioned areas. Highly recommend contracting a professional cleaner to clean the premises from top to bottom, or hire people to help you clean the premises.
- Mice droppings found in the premises. Follow the actions explained in the report to eliminate the problem.
- Some broken items have been removed, but there are still a number of them present.
- The front hand sink no longer leaks.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.

ACTION
- Immediately repair the front sandwich assembly cooler so it maintains food at 4C or colder at all times. Do NOT store foods in the cooler until it can maintain 4C.
- Repair the back 2-comp sink so it no longer leaks.
- Call a professional pest company to eliminate the mice problem. Follow all recommendations made by the pest technician, and have them service the premises until the mice problem is gone.
- A detailed cleaning of the whole premises requires to be completed. Recommend hiring a professional company to complete the cleaning, or hire people to help you clean the premises.
- Throw away all unused and/or broken equipment.

**An inspection will occur in 3 week (Apr. 18/24) to ensure the above-items have been addressed. Failure to complete all the items may result in the issuance of orders**
