301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Thorough cleaning and sanitizing required in food processing area, dishwashing area, walkin coolers, walkin freezer, dry storage area, upstairs storage area. Areas throughout facility were noted to have dust, flour and oil spills.
Corrective Action(s): Clean and reorganize entire facility which includes all hard to reach areas, shelving units, walkin cooler, walkin freezer.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): handwashing station in food processing area was missing paper towels at time of inspection.
Corrective Action(s): Operator replaced paper towels in dispenser mounted on the wall during time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: Food items/ingredients throughout the facility observed to be missing covers and/or lids. All food containers should have covers so food is protected from contamination. For example, brown sugar and flour containers missing lids.
Corrective Action(s): Install/purchases food grade containers with covers on all food containers. Missing lids need to be replaced on all larger food containers. Store all foods in food grade containers with lids.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Pest control measures in place. Pest control contractor has supplied multiple fly and mouse traps for facility. Light fly traps were found to located on countertops or not operating properly.

Back door area (located in food processing area) needs to be sealed properly to prevent pests from entering facility.
Corrective Action(s): Ensure all doors, holes and areas are sealed to prevent pest infestation.

Fly traps need to be reinstalled in appropriate places on walls in order for proper pest control measures.

Observation: Open bags of flour were found in food process area which can lead to the contamination of food. Open ingredients must be placed in food grade containers with lids.
Corrective Action(s): All food ingredients must be transferred to food grade containers with lids. Ensure to label the containers properly.

Observation: Sanitizer buckets and chemicals must be labelled properly. Sanitizer buckets were found to be located in bungee shortening containers.
Corrective Action(s): Ensure all chemicals are stored separately from food ingredients. All sanitizers must be labelled properly.

Observation: Handwashing station faucet in cake decorating area is missing handle.

Lighting fixtures missing covers in equipment storage area.

Ceiling tiles in equipment storage area have holes.
Corrective Action(s): Replace/Repair faucet handle immediately.

Replace missing covers and ceiling tiles.

Observation: No sanitation procedures being documented or recorded on routine basis.
Corrective Action(s): Ensure to set up a cleaning schedule for all daily and weekly cleaning. Ensure to set up a schedule that can be followed by all employees and documented on routine basis.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: No thermometers found in any of the coolers.
Corrective Action(s): Install new thermometers. As part of the daily procedures, it is recommended to have a temperature log that is recorded daily.

Handwashing stations are equipped with hot/cold running water, liquid soap and papertowels (see above noted violation for one of the hand sinks)
Walkin cooler in back area at 1c. Walkin cooler in front processing area at 3c.
Walkin freezer at -19c. Freezer (chest) upstairs was found at -19c.
Bleach water sanitizer found at 100ppm concentration.
Dishwasher reached 76c at dish level.
Dry storage area - all foods are located on shelves off the floor. NOTE: Ensure there is no food equipment stored on the floor at any time.
Pest Control is in place for mice. Pest control contractor is hired for pest control measures.
Foodsafe certified employees available onsite.

The following requires operators attention:
1. see above noted violations
2. Lighting throughout facility needs improvement. Lighting fixtures need to be replaced to increase light intensity.
3. Followup inspection to be conducted on Tuesday July 11, 2017.
