Observation: High temperature dishwasher registered approximately 69C at the rinse cycle with 4 runs.
Corrective Action(s): Service / fix the high temperature dishwasher to ensure at least 71C is registered at the plate level. Set up the manual dishwashing at the 2 compartment sink and do not use the dishwasher for sanitizing. Correct by: Jul 27, 2023.

Observation: 1. Mildew observed on the water tray inside the ice machine. Operator stated it was cleaned 3 months ago.
2. Food debris observed on the blade of vegetable cutter.
Correction: 1. Clean and sanitize the interior of the ice machine. Discard the current batch of ice and first batch after sanitizing. Ensure ice machine is cleaned and sanitized at least every 2-3 weeks.
2. Clean and sanitize the vegetable cutter. Ensure all equipment is cleaned and sanitized after each use. Correct by: immediately.

- Hand washing station provide with hot/cold running water, liquid soap and single use paper towels.
- Ice machine and vegetable cutter maintained in sanitary condition.
- Hand washing station at the bar area free of obstruction.
