Observation (CORRECTED DURING INSPECTION): Food stored in prep cooler inserts measured to be at 7-8C.
Corrective Action(s): Ensure food in these inserts are used up within 2 hours, and discard any leftovers. Fill inserts only 1/3 full to ensure they are changed every 2 hours.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Ice machine had evidence of biofilm/mould build-up.
Corrective Action(s): Discard ice and clean and sanitize all parts of ice machine. This should be done at least once a month.
Correct by: Immediately.
*Staff emptied ice and began cleaning at time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer was available at time of inspection.
Corrective Action(s): Mix 1 oz of bleach with 1 gallon of water for proper concentrations. Sanitizer must be available for use at all times during operational hours. Wiping cloths must be stored in sanitizer solution in between uses.
*Staff prepared fresh sanitizer solution at time of inspection. 100 ppm detected.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station was used to store buckets and wiping cloths. Paper towel dispenser at designated hand sink was not working.
Corrective Action(s): Ensure to use designated hand washing station for hand washing, and replace batteries for paper towel dispenser. The other sink is designated for food prep only.

Observation: Many food items in walk-in cooler were not covered. Bell peppers stored directly next to and under raw meats and fish.
Corrective Action(s): All food must be stored properly covered. Reorganize walk-in cooler to ensure all vegetables and ready-to-eat items are stored above raw items. All food must be stored off the floor.

Observation: Prep cooler was measured to be at 10C.
Corrective Action(s): Repair technician has been called, cooler to be serviced tonight. Do not store any perishable food items in this cooler until it is capable of maintaining temperatures at 4C or colder. Inserts at top of prep cooler may be used only if food is discarded every 2 hours.

Observation (CORRECTED DURING INSPECTION): Kitchen was smoky at time of inspection. Ventilation exhaust canopy was not turned on.
Corrective Action(s): Ventilation canopy must be turned on during any cooking. Operator turned on exhaust canopy at time of inspection.
