Observation: Floors, behind shelves, counters and wheeled equipment are greasy and have grimy, debris and build up. Staff was cleaning and mopping central area during rush house but not reaching to back of equipment.
Corrective Action(s): Pull out equipment and thoroughly clean behind. Remove large boxes and clutter to access to clean. Deep clean is needed. Be sure to complete thorough daily cleans outside of busy times. Check and sweep corners and underneath equipment daily for pest prevention. Date to be corrected by: Today

- Handwash sinks adequately supplied with soap in dispenser and paper towels
- Sanitizer quat at 200ppm. Test strips available
- Operator was observed to wash hands and sanitize work surfaces after use
- Lighting in dishwasher area can be increased to allow better cleaning and maintenance
