Operator stated shallow metal pans are on order. Rapid cooling for the time being will be performed using ice baths. Mentioned ice wands as an alternative option.

No food items unprotected at time of inspection. Uncovered food items now have lids fixed onto containers.

Back storage area cleaned. Common touch surfaces have been cleaned. Kitchen cook area has been cleaned.
