Observation (CORRECTED DURING INSPECTION): Cooked tandoori chicken (18C) was stored on the counter at room temperature. Rice inside the rice cooker was marginally hot.
Corrective Action(s): Cook tandoori chicken to order and serve immediately. Reheat rice to at least 74C before putting in the rice cooker to keep hot at 60C.

Observation: 1) Area under the dish table is dirty. 2) Dirty water gathered on the inch deep depression on the surface of the wooden prep table. 3) Raw plywood is used to cover the top of the chest freezer. 4) Wall at the back of the kitchen (next to the mixer) is stained and worn.
Corrective Action(s): 1) Remove dirty pots and pan from under the dish table. Clean the shelf. Store clean pots and pan upside down in the overhead shelf above the dish table. 2) Provide a surface that is smooth and cleanable. 3) Cover the raw wood surface with a nonabsorbant easily cleanable surface. 4) Paint the wall.
