Handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff member on shift was properly washing her hands.
Under-the-counter coolers (cooler # 1 and cooler #2) and display retail cooler were at 4 degrees C or less.
Facility has designated cold storage in the shared produce walk-in-cooler and a walk-in-freezer of the Real Canadian Superstore.
Produce walk-in-cooler (used to contain whole vegetables) was at 4 degrees C or less.
Walk-in-freezer was at -18 degrees C or less.
Hot-held rice was at or above 60 degrees C in the rice warmer. Staff informed they will cool this rice and store in the refrigeration unit.
Cooling time-temperature control measures were reviewed: Cool rice quickly from 60 to 20 degrees C or less internal temperature within 2 hours maximum and 20 to 4 degrees C internal temperature within 4 hours maximum.
Probe thermometer was available.
Food was covered in storage areas.
Refrigeration temperature records and sushi rice pH were being maintained. pH test strips were available.
Sushi rice pH was below 4.2.
3-compartment sink was supplied with hot and cold running water and three sink plugs.
200 ppm QUATS sanitizer was available inside a labelled spray bottle and from the dispenser at the 3-compartment sink.
QUATS test strips were available.
No signs of recent pest activity were evident at the time of inspection.
Staff on duty renewed her FOODSAFE Level 1 refresher course training yesterday (issue date on temporary FOODSAFE Level 1 refresher course certificate: February 6, 2024).
Permit to operate was posted in a conspicuous location.
