Observation: The floor in the kitchen is in poor condition. Tiles are lifting and missing which makes the area difficult to clean. Grease is pooling on the floor.

Comments

Mouse droppings noted inside one of the walk-in fridge, on the low stainless steel shelving unit and inside one of the wooden shelf at the front service area. They may be old droppings from a past infestation. Remove and monitor. Report to your pest control service. Store open foods in closed cupboards at closing (i.e., cake decorating piping tubes)
Remove clutter from the utility room. Repair the lights.
Temperature of refrigeration units are satisfactory.
Temperature log is maintained.
