Observation (CORRECTED DURING INSPECTION): - Potentially hazardous foods in single door undercounter cooler (referred to in code 308) were >4C. Internal temperature of products (cooked meats) ranged from 6.3C to 10.1C
Corrective Action(s): - Transfer items which were stored in cooler for less than 2 hours to alternate cooler. Discard items which are >4C and have been stored in cooler for 2 hours or greater or if period of time is unknown.

Observation: - Back single door undercounter cooler was not maintaining a temperature of 4C or colder. Temperature inside cooler was 9-10C

Corrective Action(s): - Adjust, repair or replace cooler so that it is capable of maintaining a temperature of 4C or colder. Do not use cooler to store potentially hazardous foods until it is maintaining 4C or colder. To be corrected by: 27-Mar-2023

Comments

- Handsinks (front/back) were supplied with liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder) with the exception of single door under counter cooler in the back.

- Hot holding of potentially hazardous foods was at acceptable temperatures (60C or higher)

- Cold holding and hot holding temperatures are checked and recorded throughout day. Records checked and appear complete/up to date.
- In use tongs, spoons kept either in food product (with handles above level of food) or in clean inserts/containers and replaced with clean utensils every 4 hours.
- Food products stored in a manner to prevent contamination - Wrapped/covered. Raw meat stored beneath ready to eat items.
- Dishwasher operational and dispensing adequate level of chlorine sanitizer to sanitize dishes. 50ppm chlorine detected on dish after dishwasher cycle. Chlorine test strips present for checking.
- In use wiping cloths kept in quats sanitizer solution. Solution is changed at regular intervals to ensure concentration is maintained.
- Quats solution (200ppm) present in spray bottle. Concentration was 200ppm.
- Staff/public washrooms maintained in sanitary condition.
- Foodsafe requirement met at the time of the inspection. Manager present and has completed Foodsafe level 1. Certification valid until 28-Apr-2024
- Pest control contract in place with monthly service. Viewed most recent report (12-Mar-2023) No rodent droppings observed at time of inspection.
*Minimal number of flies present near back door. Have Pest Control Technician install fly light as control measure and ensure a high level of sanitation is maintained.
