Observation (CORRECTED DURING INSPECTION):
The sanitizer in cloth buckets/containers had Quats sanitizer strenth of 50ppm. This is too low to kill germs and bacteria.
Corrective Action(s):
Immediately change the Quats sanitizer in all cloth buckets so the strength is 200ppm at all times. The sanitizer MUST be changed every 2 hours to maintain the 200ppm strength. Use timers to remind staff to do this. During the inspection, staff changed the sanitizer.

Observation (CORRECTED DURING INSPECTION):
There is accumulated dust, food and other debris found under the front service cupboards, and under the wire racks in the back storage areas. This may attract and harbor pests.
Corrective Action(s):
Sweep and clean these areas daily to remove the dust, food and debris. Ensure the broom and mop and getting under and to the back walls beneath the cupboards and racks.

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -17C or colder; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 76.3C at the plate's surface as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All food stored in food grade containers; covered; labeled; date coded; foods stored in groups; and food stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests. The mop sink and mop bucket were empty and absent of pooling water.
- Staff use utensils to handle food. Good.
- FoodSafe certified staff present.
