Observation (CORRECTED DURING INSPECTION):
- Cooked rice in small bucket probed at 24C - staff stated it was prepared 4 hours ago.
- Cooked rice in large bucket probed at 44C - staff stated it was prepared 1.5 hours ago.
Corrective Action(s):
- Ensure to practice proper cooling procedure: 60C to 20C within 2 hours and 20C to 4C or below within 4 hours. Small bucket of rice was discarded at the time of inspection. Use of warmer or rice cooker was recommended to the operator to hot hold the rice instead as operator stated rice is cooked in the oven.

Observation (CORRECTED DURING INSPECTION):
- No chlorine detected in the low temperature dishwasher. Test strip was showing less than 10ppm of chlorine.
Corrective Action(s):
- Technician was called at the time of inspection and the dishwasher was fixed. Final rinse water measured 50ppm chlorine and temperature reached 52C. Ensure to test the chlorine concentration everyday before shift begins to ensure dishwasher is fully functional.

Unwrapped cut up lamb chunks observed in the chest freezer.

Observation (CORRECTED DURING INSPECTION):
Noted raw calamari pieces thawing in metal containers in ambient - probed at 12C.
Corrective Action(s):
Staff stated calamari was out less than 2 hours and will be put into cooler after marinating. Ensure to thaw frozen food items using one of the following methods: submerged under cold water, in the cooler, using microwave. Calamari was transported to working cooler at the time of inspection.

Bleach sanitizer available in spray bottle measured at 200ppm.
80% ethyl alcohol in spray bottle is in use as sanitizer for the front.
