Observation: Grease buildup noted on the floor below the cookline. Debris and buildup noted on the floor below the dishwashing area and debris noted on the dishmachine.
Corrective Action(s): Note: This is a repeated violation from the last routine inspection.
Clean and sanitize the abovementioned areas and maintain in a sanitary condition after cleaning.

Comments

Routine inspection conducted today:
Handwash stations, including staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were storing food at 4.0C or below.
All freezer units were storing food at -18C or below.
Food in the cooler units were stored protected and in the proper storage hierarchy.
Rice cookers were holding rice at above 70.0C in both units.
Bleach sanitizer spray bottle available. 200 PPM chlorine residual detected.
High temperature dish machine was noted at 78.2C at the plate level and 90C at the gauge level during the rinse cycle.
No signs of pest activities noted during the inspection.
Operator has renewed his FOODSAFE level 1 certificate (expires May 2028).

Note: Proper dispensers with handles were in use for bulk food containers. Please ensure that the handles of the dispensers do not come into contact with the food to prevent potential contamination of food.
Lots of food was being cooled during the inspection (just recently cooked) and as per operator, will be placed into coolers/ freezer shortly after. However, it was noted that all the refrigeration and freezer units are quite full. Please do not overcook the amount of food you need where there will be no space for storage. When a refrigeration unit is overfilled, there is a chance that not everything in that unit will be cooled evenly or able to maintain at 4.0C or below.
