Observation: Althought the temperature of the dishwasher measured inside of the machine is reaching 71C (good), the final rinse gauge only reads about 60 C and it should read 82C.
Corrective Action(s): Verify accuracy of the final rinse gauge. If the booster is not working properly, repair. Final rinse gauge should read 82C as indicated on the machine specification label.

Comments

Coolers - food is at 4 C or colder. Complete daily temperature checks.
Hot holding - soups are at 60C or hotter.
Handwashing stations have liquid soap and paper towels.
A chlorine solution is available in a labelled spray bottle to sanitize the counters, cutting boards and any food contact surfaces. Do this every 4 hours.
Ensure that the red bottle is re-labelled.
Dishwasher has a hot water temperature of 71C (measured inside of the machine).
The wash gauge appears to be working. The rinse gauge is not reading 82C for the final rinse.
