Observation (CORRECTED DURING INSPECTION): High temperature dishwasher had a rinse temperature of 82'C showing on manifold but <71'C at plate level. Temperature was adjusted by the operator and final rinse temperature of 71.6'C was achieved. All dishware washed through the dishwasher to be rewashed today.
Corrective Action(s): Ensure to have the dishwasher rinse temperature set at 89'C on manifold and monitored on a regular basis.

Observation (CORRECTED DURING INSPECTION): Handwashing sink in the back prep room missing paper towels.

Comments

Routine inspection conducted:

- Handwashing station at front adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Walk-in freezer operating at -18'C.
- Hot-holding units operating above 60'C.
- Secondary step cooking being followed. Left over meat sliced (all) to be stored in cooler.
- 200ppm Quats available in a labelled spray bottle and at automated dispenser.
- Food storage practice in walk-ins satisfactory.
- No evidence of pest activity observed.

General sanitation of the facility satisfactory throughout.
NOTE: Ensure to have the cardboards removed from floors. Obtain rubber mats as suggested at this time.
