Rice hot held above 60 degrees C.
Lamb, beef, and chicken in hot holding unit stored at or above 60 degrees C.
Temperature monitoring records now maintained and available for review. Ensure they are kept up to date and available for review at all times.
Assembled chicken cone stored off the floor.

Operator still to obtain a probe thermometer for staff to use on cooking, cooling, hot holding etc. temperature verifications.

Operator still to obtain a replacement permit to operate. Ensure the replacement permit to operate is posted in plain view of the public.
