Observation (CORRECTED DURING INSPECTION): Small amount of food debris observed on the blade of the meat slicer
Corrective Action(s): This was cleaned and sanitized at time of inspection. Ensure staff rotate the blade after cleaning to verify the blade has been properly cleaned.

Observation (CORRECTED DURING INSPECTION): Final rinse temperature on the dishwasher observed to be too low at appox 60c.
Corrective Action(s): Customer service ordered halted and premises closed at time of inspection. Technician was nearby and arrived on site while the inspection was still in progress, Technician determined the hot water setting was set too low on the hot water tank upstairs and debris had clogged the float mechanism inside the dishwasher. Dishwasher was repaired at time of inspection, Final rinse temperature of 76c (at plate level) was observed.
Re wash all utensils put through this morning

Observation: Wash water temperature on the dishwasher observed to be too low at 120F. This is resulting in the final rinse not reaching a minimum of 71c (At plate level).
Several cracked container lids observed inside the walk in cooler.
1 bolt observed missing from the top side door of the ice machine.
Corrective Action(s): Technician was called at time of inspection
Replace damaged lids as the plastic can potentially break off and fall into the food.
Replace missing bolt from the ice machine door to ensure the top door can be securely closed.

Air curtain panels replaced
New shelving observed being installed inside the walk in cooler
Monitoring logs being maintained. Hot holding has been added to the monitoring logs
Glasswasher in the bar area tested at 130F and approx 90ppm chlorine, Soap dispensed into wash tank.
Scoops stored in containers in the bar area. Beer is no longer stored in the ice.
Under side of salamander unit cleaned.
Grease diffusers in the exhaust canopy being maintained. Premises is now cleaning them weekly.
Hot holding at >60c
All cold holding equipment cold holding at <4c
Ice machine (Top side) observed to be clean
