Walk in freezer temperature measured at -5 C. Staff said freezer was being re-organized and opened and closed a lot (freezer temperature should be -18 C, monitor and adjust if necessary). Self-serve beverage cooler temperature measured at 4 C or below. Hot holding units temperature measured 60 C or above 3 compartment sink available for manual dishwashing (wash, rinse, sanitize). Quats registered between 200-400 ppm. Quats solution in bucket with cloth available for surface sanitization and registered at 200 ppm.
