Observation (CORRECTED DURING INSPECTION): Cheese (3 types)- was past the indicated time frame on the time tracking chart and was still being used. It was probed with a themometer and the internal temperature was 19-21 C.
Corrective Action(s): Discarded. Repeat violation. If time tracking is going to be used, items left at room temperature must be discarded after the specified time limit and this must be recorded.

Observation: The door on the small cooler across from the prep table is broken and will not close properly without tape.

Observation: A light cover was missing from one of the kitchen lights near the entrance.
Corrective Action(s): Manager on site said that a new one was on order. Ensure that it is replaced within 2 weeks.

Observation: The cooler underneath the prep. table had a broken thermometer.

Comments

-Food Safety Plan not in use. Food on the prep. table at room temperature was not discarded after the specified time frame. This was noted last inspection.

All coolers were < 4 C
All freezers were < -18 C.
Hand sinks supplied with hot and cold water, soap and paper towels.
Quats sanitizer was at 200 ppm.
Bleach was at 100 ppm.
No evidence of pests.
General sanitation was satisfactory.
