Corrective Action(s): The 3-compartment sink dishwashing method will be used in the meantime. Violation Score: 15

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: The dishwasher had 0 ppm chlorine at the plate level. The chlorine bucket was almost empty and a new one was connected to the dishwasher's sanitizer line. However, it still showed 0 ppm chlorine after several runs. Corrective Action(s): Fix by Monday, January 30th. Violation Score: 9

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Hot held foods were > 60 C. Quats sanitizer was at 200 ppm. No evidence of pests. General sanitation was satisfactory.
