301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Ice machine was not maintained in a clean condition. Black debris was present inside the ice machine on the right side.
Corrective Action(s): Staff drained the ice from the ice machine during the inspection and sanitized the interior surface to remove the black debris. Staff ran the cleaning cycle of the ice machine during the inspection. Staff had prepackaged ice from an approved source for interim use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Less than 200 ppm Quaternary ammonium compounds (QUATS) sanitizer was available in both sanitizer pails. The QUATS sanitizer had been diluted and it was last changed last night.
Corrective Action(s): Staff refilled both sanitizer pails with undiluted QUATS sanitizer in accordance with manufacturer's directions during the inspection. Ensure the QUATS sanitizer and wiping cloth is changed frequently to maintain it at 200 ppm.

Obtain quaternary ammonium compounds (QUATS) test strips to monitor the concentration of QUATS; Correct within 2 weeks.

Observation: Black debris/mould was present inside the ice machine.
Correction: Drain the ice and clean and sanitize the ice machine in accordance with manufacturer's specifications; Correct today.
Comments

Follow up inspection:
-Prep. cooler near the kitchen has been re-serviced and required more gas according to staff.
-Prep. cooler near the kitchen was at or below 4 degrees C.
-Prep. cooler near the kitchen was equipped with a new thermometer. Previous inaccurate thermometer was discarded by staff during the inspection.
-Sanitizer spray bottle and sanitizer pails were labelled to identify the contents.
-Chili oil (garlic in oil spice mixture) was stored in the walk-in-cooler between use.
-Handsinks were accessible for handwashing.
-Cleaning improvements had been made to the floor below the stairwell. Note: One ant was visible at the time of inspection. Ensure to keep up with regular cleaning of this area.
