Observation: Rodent droppings were found in the dry storage area and under the table by the slicer.
Corrective Action(s): Ensure all areas affected by rodent droppings is cleaned and sanitized. Continue to monitor for pest activity and contact your pest control operator as required.

Comments

-Facility has a main kitchen and three serving kitchens. Serving kitchens were not inspected due to the COVID-19 Pandemic.
-Food is prepared in the kitchen and served immediately.

-Walk-in cooler was at 4C.
-Walk-in freezer was at -17C.
-Temperatures checked and recorded at least once daily.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer dispenser and spray bottle was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat slicer was found to be clean and sanitary. Slicer is disassembled for cleaning and sanitizing at the time of inspection.
-Equipment was found to be clean and well maintained.
-Ice machine was clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Canned food items were in good condition.
-Raw meats were found stored below ready-to-eat foods.
-FOODSAFE Level 1 valid until March 14, 2023.

COVID-19:
-Facility has a workplace COVID-19 safety plan.
-Staff complete a daily health screening.
-Staff were observed wearing face masks properly at the time of inspection.
