306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Build up of food debris and grease noticed behind the syrup storage shelves, underneath dry storage shelving and underneath/behind upright freezer and in other hard to reach areas.
2. Shelves in the walk-in cooler has rust build up and some have mould/debris accumulation.
Corrective Action(s): 1. Clean floors thoroughly especially underneath equipment and shelving to remove any food debris. Ensure to not push debris underneath the shelves while brooming floors (By: Dec. 13, 2018)
2. Recommended replacing the shelves with easily cleanale shelving. Alternatley, clean all shelves thoroughly to remove mould and rust ( By Dec. 20, 2018)

Observation (CORRECTED DURING INSPECTION): An unlabelled spray bottle used for water as per the staff contained quats sanitzer ( Suma- Final step).
Corrective Action(s): Ensure that all spray bottles of any chemicals, cleaners, sanitizer and even water are clearly labelled. Ensure to double check the bottle label before re-filling it from the chemical dispensers. ( Immediately)
