- Cooling units less than 4 C.
- Hot holding above 60 C.
- Dishwasher 72 C - Make sure to re-run the first set of dishes several times to get the water temp. high enough.
General cleanliness is very good, but there are many damp cloths laying around for surface cleaning. These must be sanitized regularly. Cloths look very old and stained too. **Recommend using a sani-bucket filled with bleach water solution at about 200 ppm. This bucket should be changed regularly (very 2 to 3 hours).
**Bleach spray bottle measured at 50 ppm - should be between 100 - 200 ppm. Make sure it is changed at a consistent interval.
