Observation (CORRECTED DURING INSPECTION): Sanitizer solution not available in kitchen at the time of inspection
Corrective Action(s): - Prepared solution wasn too stong, more than 400pm quats
- Diluted several times and was measured at 200ppm quats. Always make sanitizer solution as per manufaturer's directions and check with test strip.
- Sanitizer solution must be prepared fresh every day and must be changed on regular basis

Observation (CORRECTED DURING INSPECTION): The only handsink available in the kitchen lacked paper towel at the time of inspection

Observation: - Several bulk bins missing lids in the kitchen and sweets containers in the walk-in cooler
- Black garbage bags being used to cover cooked sweets and prepared dough
Corrective Action(s): - Provide proper well fitting lids to all the bins and containers
- Do not use garbage bags to cover the food items as these are made from plastic that is treated with chemicals

Comments

Routine inspection was conducted and following are observed:
- Handsink is supplied with hot and cold running water, soap.
- Coolers- walk-in, prep cooler- are less than 4C. Sweets cooler is at 6C. NOTE: Adjust the setting so that the temperature is maintained at less than 4C
- Chest freezers - one in kitchen and other upstairs - are measured at -13C to -15C
- High temperature dishwasher is measured at 78C during final rinse at the dish surface
- No evidence of pest activity

NOTE: There is a leak in the ceiling upstairs, call for service and fix for the leak
NOTE: Clean underneath cookline and maintain sanitary conditions in the kitchen
