Observation (CORRECTED DURING INSPECTION): During time of inspection, low temperature dishwasher was not dispensing chlorine at final rinse (0ppm)
-Staff called for service during time of inspection, one staff at facility was able to correct during time of inspection
- Final rinse measured at 50ppm
Corrective Action(s): Purchase test strips and test dishwasher frequently
Dishwasher must be dispensing at least 50ppm of chlorine concentration at final rinse

Observation: During time of inspection, handwashing station near main cook line missing paper towels
Corrective Action(s): ALL handwashing stations must be equipped with hot/cold running water, liquid soap and paper towels at ALL times

209 - Food not protected from contamination [s. 12(a)]
Observation: During time of inspection, the following observations were observed:
1) Numerous milk crates of potatoes and peeled onions were stored on the ground
2) Newspaper used throughout facility as liners
3) Foods throughout facility were observed to not be covered and protected from contamination
4) Garbage bags used to store samosa dough
Corrective Action(s): 1) Ensure that foods are NEVER stored on the floor, must always be stored at least 6" off the floor
2) DO NOT use newspapers are liners, discontinue this practice immediately
3) All foods must be kept covered and protected from contamination with food grade materials (i.e., plastic wrap, sealable lids, food grade containers, etc)
4) Discontinue this practice, use food grade bags for food storage

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: During time of inspection, the following observations were made:
1) Food debris/ grease accumulation throughout the facility, especially the below noted areas:
a) common touch areas of coolers
b) underneath, between and on sides of kitchen equipment in facility
c) shelving in facility (i.e, spices rack, various compartments holding pots and pans)
d) various walls in facility with food/liquid spillage accumulation

2) Heavy grease accumulation on metal slats of commercial fume hood at main cook line
3) Walk in cooler ceiling and fan covers in need of cleaning/ dust accumulation apparent
4) Drip trays underneath cold holding equipment pooling with water and mould
Corrective Action(s): 1) Ensure that these areas are wiped down, cleaned, degreased and maintained on a frequent basis
2) Metal slats are to be removed, degreased, cleaned and slats must be maintained in good sanitary condition
Professional service should be done at least every 6 months (minimum)
3) Ensure to wipe down, clean and maintain this area on a regular basis
4) Ensure these are cleaned, pooling water removed and maintained on a regular basis
