Observation (CORRECTED DURING INSPECTION): 3 frozen whole turkeys being thawed at room temperature. Staff had advised turkeys were just delivered before inspection, to be placed at room temperature until 2:00pm and placed in cooler. Inspection conducted before 12:00pm. Surface temperature at 2'C at this time. All were moved to walk-in cooler for thawing.
Corrective Action(s): Ensure all frozen foods are thawed by leaving under cold running water or placing in cooler in advance. Do not thaw food by leaving at room temperature.

Observation: Fruit flies (>10) observed around drink dispensing gun at the left side bar.
Corrective Action(s): Ensure all guns/holders/surfaces are cleaned and sanitized using bleach on a more regular basis throughout operation to avoid attracting flies. Remove all sugar residue that could be left on surfaces.

-200ppm QUAT available in labelled spray bottles
-Glass washes achieved >12.5ppm iodine at final rinse.
-General sanitation satisfactory.
-Washroom handsinks satisfactory.

KITCHEN
-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-Temperature monitoring system in place. No issues observed from recent records.
-General food storage practice satisfactory.
-Ventilation canopy hood serviced and maintained.
-Colour coded tongs in use to avoid cross contamination. Good.
-High temperature dishwasher achieved 74.9'C at the plate level after final rinse.
-200ppm QUAT available in labelled spray bottles and a bucket for main prep area.
-No evidence of pest activity observed.
-Back area satisfactory. Ice machine satisfactory; scoop stored in proper manner.
-General maintenance and sanitation of the facility satisfactory. However, sanitation level can be improved by cleaning hard to reach areas on a more regular basis, especially underneath grill/stove.

NOTE: Ensure to close the top lid for main prep cooler when not busy.
