Observation (CORRECTED DURING INSPECTION): Hand washing sink in the back had the hot water turned off. The sink must be fully functional at all timess.

Comments

-The stand up cooler at the end of the line was at approximately 9 C. It had several trays of rice and some meat cooling inside. Ensure that it goes down to 4 C.

All other coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests.
Dishwasher final rinse cycle had 50 ppm chlorine. Monitor daily.
General sanitation was satisfactory.
