Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: sanitizer solution not available at the time of inspection in the BOH.
Corrective Action(s): Remade. ensure that sanitizer solution is available at 100 ppm chlorine bleach prior to starting work and is used to store wiping rags.

Ensure that hands are always washed using liquid soap and warm water then dried with paper towels.

=Walk-in cooler (3C), BOH drink cooler (2C), and prep cooler (2C) measured < 4 degrees C
=Upright double freezer measured -18 degrees C
=BOH fried rice hot holding (61C), FOH display (celery chicken 76C, fried rice 78C, and green beans 77C) measured > 60 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method. Sanitizer solution in third compartment measured 100 ppm chlorine.
=Wiping cloths stored in bleach sanitizer solution at 100 ppm chlorine in FOH and wok area. BOH missing; refer to above violation
=Dedicated prep sink available for food preparation
=General food storage practices good at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
