Paper based inspection Report #247275: Hand sinks stocked with liquid soap and paper towels. Sanitizer (quats) available at 200 ppm. Test strips available. Walk-in cooler at 1-2 deg C. Display cooler at or below 4 deg C. Hot holding (rotisserie chicken, meal preps) was at or above 60 deg C. Temperature log available and up to date. High temp dishwasher reached 72.1 deg C at plate surface. Hand delivered "Permit to Operate" - when report delivered. *Cheese stored too close to deli meats. Store food items in groups (i.e. dairy/cheese, meats, etc.). Note: Follow PHO order regarding self-service buffet (not yet open).
