Temperature of coolers and freezers were adequate.
Discussed rotation of stock in freezer.
Bleach solution was available. Solution was very strong. (You only require 1tsp bleach per litre water)
Discussed cleaning and sanitizing of cutting boards and replacing when the cuts in the board are too deep to allow proper sanitizing.
Final rinse temperature of dishwasher was 72 degrees at the plate.
No signs of pest infestation.
