Observation (CORRECTED DURING INSPECTION): The surface sanitizer had 0ppm chlorine solution. This is a repeat violation.
Corrective Action(s): The staff prepared new surface sanitizer at 100ppm chlorine solution with presoaked wiping cloths. Surface sanitizers must be available at all times at 100ppm to clean and sanitize any food contact surfaces. Failure to comply with this requirement will lead to stricter enforcement and/or a violation ticket.

Observation: Pans of raw pizza dough stored directly on the floor inside the walk in cooler.
Corrective Action(s): Store all pizza doughs at least 15cm (6inches) off the floor to discourage pest and to protect the food from contamination.
Date to be corrected: Immediately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: There is a water leak at the three compartment sink and the staff is using a bucket to collect the water. This issue has not been fixed since the previous inspection conducted in August.
Corrective Action(s): Fix the leak. Pooling of water will lead to pest issues in the future. The staff stated that the kitchen will undergo a renovation to change the pipes.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: The thermometer inside the walk in cooler was incorrect. Measured 50F(10C) at the time of the inspection. A calibrated thermometer measured the walk in cooler at 4C.
Corrective Action(s): Replace the broken thermometer inside the walk in cooler.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No FOODSAFE trained staff on duty at the time of the inspection. This is a repeat violation.
Corrective Action(s): Correction order issued:
Register two more staff to FOODSAFE level 1 course. They must successfully pass the course and provide valid FOODSAFE level 1 certificates.

Comments

Correction order issued at the time of the inspection. Failure to comply with this order within the correction date will lead to a violation ticket.

- General sanitation is satisfactory.
- Handwashing station stocked with hot/cold running water, soap, and paper towels. Ensure to provide wastebin near the handwashing station.
- All coolers (display, walk in, prep) at < or = to 4C.
- Chest freezer at -18C.
- All other refrigeration units are equipped with accurate thermometers.
- Daily temperature logs were kept up to date.
- Three compartment sink available for manual dishwashing. Sanitizer available at 100ppm bleach solution with drain plug to fill the sanitizing compartment of the sink. Please follow the proper manual dishwashing procedures and use the designated sanitizing compartment to sanitize equipment.
- Dry storage area needs better organization. Adequate wire racks available.
- No signs of pest activity at the time of the inspection.
