Observation (CORRECTED DURING INSPECTION): Quats dispenser dispensing Quats at 0 ppm. There appeared to be air bubbles in tube dispensing the solution.
Corrective Action(s): Repair dispenser so that it is dispensing the solution at the correct concentration (as recommended by the manufacturer). Sanitizer solution strength should be verified with test trips.
Sanitizer solution bottles were refilled with a manually made solution at 200 ppm.

Routine Inspection
-All coolers (except standing cooler by ice cream freezer) at 4 C or below.
*Standing cooler at 6 C; chef adjusted at the time of inspection. Ensure it drops to 4 C in the next hour. Inspection was done around lunch service and this cooler is opened/closed frequently.
-All freezers at -18 C or below.
-Hot holding of soup >60 C.
-Handwashing sinks equipped with hot and cold running water, liquid soap and single use towels.
-High temperature dishwasher registered at > 71 C on plate surface.
-Quats sanitizer registered at 200 ppm at the dispenser. Ensure solution is changed as needed.
-General sanitation satisfactory.
