Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: Employee tried to wash hands in warewashing sink. Employee only rinses hands and does not use soap.
Correction: Handwashing sinks must be used for handwashing. Wash hands properly - wet your hands, scrub with soap for at least 20 seconds and rinse and dry your hands. This must be done every time your hands are soiled or between tasks.

- facility may operate, provided that:
> the sushi prep cooler is not used
> using the smaller prep cooler for sushi items and moving the salad items to the larger glass door cooler
> this is only a temporary solution - this method will not be allowed for the weekend
