Observation (CORRECTED DURING INSPECTION): Partially cooked chicken breasts on counter 18C; also on the counter were a medium size bowl (approx. two litre) 2/3 filled with tempura vegetables - 23C; tempura prawns in a tupperware container 24C.
Corrective Action(s): Foods must be fully cooked before cooling, DO NOT partially cook ANY food.
Foods to be cooled to 21C within two hours and to an internal food temperature of 4C within the next 4 hours. Make sure that foods are cooled as per the requirements of the food safety plan.
All staff to be trained to ensure that they follow proper food safety practices.

Observation (CORRECTED DURING INSPECTION): Seared Chicken breasts cooling on counter had blood pooling and were still red in colour - internal food temperature 18C.
Corrective Action(s): Foods must be thoroughly cooked before cooling. DO NOT partially cook any food. Cooked foods that have been properly cooled must be reheated to an internal food temperature of 74C for a minimum of 10 seconds before serving.

Observation (CORRECTED DURING INSPECTION): Pre-made California rolls 16C on tray on counter; tub of imitation crab on counter 11C.
Corrective Action(s): All potentially hazardous foods above 4C for greater than two hours to be discarded; all other food/s to be placed in shallow pans/trays, loosely covered and placed in the walk-in cooler to maximize cooling. Foods that do not cool, as per the requirements of the Canada Food Code to be discarded.

Corrective Action(s): Foods to be labeled to ensure that foods come from approved sources and that proper stock rotation is practiced.

Observation: Food debris/dirt accumulations on equipment handles, between deep fryers, equipment, table legs and supports, shelving etc; take out containers of soy sauce kept in dirty cardboard box; dirty cardboard and tin foil being used as shelving paper.
Corrective Action(s): Premises needs a thorough cleaning to remove all food debris/accumulations on all equipment, shelves etc; all shelving cardboard and tin foil to be discarded and shelving finished so that it is smooth, impervious and easily cleanable. If using removable matting make sure that this matting is removed and cleaned routinely and the sanitation plan updated.
