Observation (CORRECTED DURING INSPECTION): Food debris noted on meat slicer behind/around the blade guard.
Corrective Action(s): Meat slicer must be thoroughly cleaned and sanitized after each use. Operator cleaned at time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) No sanitizer residual detected after rinse cycle of dishwasher.
2) No surface sanitizer available in back kitchen area.
Corrective Action(s): 1) Until dishwasher has been repaired, all dishes washed in the dishwasher must be manually sanitized after being put through the dishwasher. Mix 1 oz bleach per gallon of water in sanitizing sink for proper concentrations.
2) Sanitizer solution must be available in the back kitchen area since food preparation occurs there.

- All coolers were maintaining temperatures of 4C or colder
- Freezer temperatures satisfactory
- No hot holding at time of inspection - restaurant was getting ready to close for the day.
- All food stored off the floor and properly covered
- Ice machine and ventilation canopy maintained in sanitary conditions
