304 - Premises not free of pests [s. 26(a)]
Observation: Found rodent droppings on a sealed package of barley grains. Droppings also noticed underneath the dry storage shelves. Evidence of rodent damage noticed (chewed vinyl baseboard behind the deep freezer).
Corrective Action(s): Discard all open food items stored in the dry storage area immediately due to risk of contamination by rodents. All other items must be stored in totes/bins with tight fitting lids.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Noticed a rectangular cut out hole behind the deep freezer in dry storage area. Drywall cracked and broken in several areas. Found boxes and other artices stored on the floor or low shelves in the dry storage areas.
Debris and tiles etc found underneath beer storage shelves near the entrance.
Corrective Action(s): 1. Seal or patch ALL holes, cracks or any damaged sections of drywall throughout the facility. Carefully inspect the building for potential rodent harborage sites. Cover all floor drains with metal covers. Clean and organize the shelves and under-counter spaces in the back and front areas of the kitchen. ALL BOXES AND ARTICLES MUST BE STORED AT LEAST 6 INCHES OFF THE FLOOR. (By January 5, 2017)
2. Clean the floor especialy under the shelves, underneath and behind freezers and all other equipment to remove food debris. (Immediately)
3. Get the premises thoroghly inspected from the contracted professional pest control company to start rodent monitoring and control immediately.

Comments

Efforts have been made to address most of the structural and maintenance related issues identified in the Nov. 9, 2016 inspection report.
-Walk-in cooler interior surfaces have been covered with non-absorbent sheets. No leaks noticed at the time of inspection.
HOWEVER, THE INTERIOR WALLS AND CEILING MUST BE REDONE WITH PROPER COMMERCIAL MATERIALS AND SURFACES .
-No roof leak noticed in the dry storage room at the time of inspection.
PATCH ANY HOLES OR CRACKS IN THE CEILING DRYWALL WHERE THE DRAINAGE PIPES ENTER THE CEILING. (ASAP).
- REMOVE DRYWALL DEBRIS FROM THE BEER WALK IN COOLER. REPAIR OR REPATCH AND REPAINT THE WALLS SO AS TO MAKE THEM
SMOOTH AND EASY TO CLEAN.
-REPLACE ANY MISSING BASEBOARDS THROUGHOUT THE KITCHEN AND BACK STORAGE AREAS.

For rodent prevention:
Absolutely no food or water to be on the floors overnight.
Areas behind the equipment, deep fryers must be cleaned every night.

Please send a copy of the work order/contract from the Pest control company.
Reinspection in 2 weeks.

Bar washer monitoring up to date. Ensure QUATS test strips are also available to monitor quats concentration.
All cooler temperatures satisfactory.
