Observation (CORRECTED DURING INSPECTION): No sanitizer available onsite for use. Operator informs that he will mix it when he cleans. Repeat. Always premix the 100ppm bleach sanitizer when the restaurant is open for business as you are often wiping the counters.
Corrective Action(s): Operator mixed 100ppm bleach sanitizer onsite. Correction order shall be issued if this infraction is repeated again.
