Observation: Opened flour bags and open packages found in food processing area. This is an outstanding violation from the last routine inspection.
Corrective Action(s): All content from open bags must be transferred to food grade containers with lids to protect food ingredients from contamination. Food grade containers are required to hold bulk items.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Sanitizer buckets are not labelled properly. This is an outstanding violation from the last routine inspection.
Corrective Action(s): All chemicals and sanitizer buckets must be labelled. This must be done immediately.

Observation: No cleaning schedule was implemented as per last routine inspection.
Corrective Action(s): Ensure to set up a cleaning schedule that can be followed by all staff.

Observation: Thermometers are still missing in coolers. This is an outstanding violation from last routine inspection.
Corrective Action(s): Replace or install all thermometers. Ensure to keep a temperature log that is completed daily by staff.

Comments

Handwashing stations are equipped with liquid soap, paper towels and hot/cold running water. All dispensers are working and in operation.

The following has been completed from last inspection:
1. Cleaning throughout the facility has been completed. Shelves have been reorganized.
2. Pest control measures have improved. All fly lights have been installed appropriately. Back door area has newly installed seal at the bottom of the door. These measures will help to control and prevent entry of pests.
3. Handwashing station in packaging/cake decorating area has been fixed. New faucet handle has been installed.
4. Missing light covers have been installed.
5. Ceiling tiles that were damaged or unsanitary have been replaced.

The following requires operators attention:
1. see above noted violations.
2. Lighting throughout the facility needs to be improved. All lighting fixtures should be replaced or fixed if not working properly.
