Reviewed product information regarding juice concentrates stored in juice dispenser - product information indicate product is pH 3.7-3.8 with a brix of 58-65 and is not a potentially hazardous food. Therefore, juice dispenser does not need to maintain product at 4 C for food safety purposes. Juices can be dispensed at temperatures suited to taste. Required premise cleaning has been completed. Upper floor storage room sanitation is improved and floor under equipment in central kitchen has also improved. Ensure premise cleaning is conducted daily to maintain a high level of sanitation and discourage pest activity.
