Food Safe - Manager and Kitchen chef have equivalent to Food Safe Level 1 - good.
Food Safety Plans - keep copies of plans on site.
Reviewed procedures for quick cooling - use ice water bath. Prep sink is available.
Reheating is being done quickly on stove to 74 C - good.
Mussels - Tags are being kept for 90 days.
No raw eggs. No raw oysters.
Coolers (4) are all at 4 C or colder. Check daily.
Hand washing - hot/cold water, liquid soap, paper towels in dispenser are available at designated hand sink. Non-latex gloves are also available.
Quats sanitizer is in labelled spray bottle - 200ppm - good.
Chlorine can also be used (use 1 tsp plain bleach in 1 litre of water).
Premises is clean and well-organized.
Keep your written sanitation plan and cleaning schedule on site. Add cleaning and sanitizing of ceiling of ice machine to routine schedule.
Dishwasher provided a hot water final sanitizing rinse (71 C/160F detected inside of the machine), only when the temperature gauge read 90 C. Pre-heat dishwasher and make sure final gauge reads 90 C for each run.
