Observation (CORRECTED DURING INSPECTION): The following items in the walk-in cooler were probed (temperature ranged from 7-8C) and discarded due to time (temperature last checked at 5:10 am) and temperature abuse:
- Raw shelled eggs x 9 boxes
- Chocolate milk x 67 bottles
- White milk x 37 bottles
- Bulk milk x 2 cases

Observation (CORRECTED DURING INSPECTION): Observed two drink mixing spoons stored in metal containers with pool of drink at the bottom. Operator removed the spoons.

Observation (CORRECTED DURING INSPECTION): Observed two in-use wet wiping towels on the counter (near drive-thru window and front coffee section) without any sanitizer residue. Operator removed these towels at the time of inspection.

Observation: The walk-in cooler's ambient air temperature was measured at 7.5-7.8C. The operator contacted the technician at the time of inspection.
Corrective Action(s): Service the cooler so that it can keep foods at or below 4C at all time. Correct this by: May 14, 2021.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Coolers were at or below 4 degrees C (with exception to walk-in cooler)
Freezers were at or below -18 degrees C.
Refrigeration units were equipped with thermometers.
Hot-held food was at or above 60 degrees C.
100 ppm chlorine sanitizer was available in the buckets with wiping cloths.
200 ppm QUATS sanitizer was available in the third compartment sink unit.
Sanitizer test strips are available on site.
No signs of recent pest activity was evident at the time of inspection.
Ice machines were in a clean condition and scoops stored separately.

Correction order was issued in regards to the walk-in cooler. Follow up inspection is to be conducted on May 17, 2021.
