Observation (CORRECTED DURING INSPECTION): 1) Deli slicer was found to have food debris behind the blade and sharpening guard.
2) Bleach sanitizer pail had no detectable chlorine concentration.
Corrective Action(s): 1) Ensure slicer is properly disassembled for cleaning and sanitizing to prevent potential contamination of foods. Slicer was cleaned and sanitized at the time of inspection.
2) Bleach sanitizer must be maintained at 100ppm to 200ppm to properly sanitize food contact surfaces. Bleach was prepared at 200ppm at the time of inspection.

-Walk-in cooler was at 4C.
-Pizza prep cooler (right) was at 3C.
-Pizza prep cooler used for temporary storage of foods - used within 2 hours.
-Refrigerator/freezer was at 4C/-14C.
-Upright freezer was at -18C.
-Chest freezers were at or below -18C.
-Hot holding was greater than 60C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
-Foods stored off the ground and covered.
-General sanitation satisfactory at the time of inspection. Some additional cleaning required along the floors of the walk-in cooler.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
