Routine Inspection - Hand washing station fully equipped with soap and paper towels in dispenser. Staff hand washing were observed at the time of inspection. Staff hygiene observed to be satisfactory. - Walk in cooler temperature measured at or below 4C. Food is properly labeled, covered and stored properly. Walk in freezer temperature measured at or below -18C. Temperature monitoring conducted via app. Line cooler with inserts measured at or below 4C. - Food in Hot holding units measured at or above 60C. Ensure to check the temperatures daily. - Floor is clean and maintained. - Three-compartment sink maintained. Dishware washing observed to be satisfactory. - Cutting board cleaning and sanitizing discussed. New cutting boards are in order. Sanitizing boards discussed. - Sandwich wrapping and potential allergens from cookies discussed with staff. - Mop sink and cleaning supplies are well maintained. - QUAT sanitizer provided measured 200-400 ppm. Ensure to fill up or change the sani bucket as needed. - Sanitizer in spray bottles available and properly labeled. - Food stored above the floor. Shelve observed to be organized and clean. - No obvious sign of pest activity noted at this date. Back door equipped with door sweep.
